Kinoa salata, pečeno povrće, i korico * Quinoa salad, grilled vegetables, chorizo

Sastojci

200 g kinoe
3 Kašike maslinovog ulja
1 crveni luk, očićen i isečen na kriške oko 1 cm debljine
2 papriek, babure, žuta i crvena, isečena na kriške
200 g tikvica , isečenih na veče kriške
3 čena belog luka, neočišćenog
1 limun, rendan korica i sok
100 g mladog graška, sa ljuskom
1 pasternak
1 korico
Prstohvat šećera




Priprema

Skuvamo kinou po uputsvu sa pakovanja, i dobro ocedimo



Predgrejemo rernu na 200 stepeni C .

Naredjamo povrće na ravan pleh i pospemo uljem i začinima



Pečemo oko 15 minuta



 Ispečen beli luk istisnemo i pomešamo sa začinima , sokom i koricom od limuna i šećerom i uljem pa pospemo po povrću i kinoi

Quinoa salad,  grilled vegetables, chorizo


Quinoa lend itself very well for this type of salad , which is full lunch. Very tasty





Ingredients


  • 200 g quinoa
  • 3 tbsp olive oil
  • 1 red onion, peeled but left whole, then cut into 1cm thick round slices
  • pepper , red, yellow or mixture, deseeded and cut into chunky long wedges
  • 200g baby courgette , halved lengthways
  • 3 garlic clove, unpeeled
  • zest and juice 1 lemon
  • pinch of sugar
  • small pack flat-leaf parsley, roughly chopped
  • 100 g snow peas
  • 1 parsnip
  • 1 Chorizo sausage



Create


Cook the quinoa following pack instructions, then drain really well and set aside.

Meanwhile heat oven to 200C/180C fan/gas 6. 

Toss the courgettes,garlic and onion and  with the rest of the veg and chorizo,  in oil, season and roast for  20mins.




Squeeze the roasted garlic cloves out of their skins and mash with some seasoning. Stir in the remaining oil, lemon juice and zest and season with sugar to taste. Drizzle over the quinoa and toss together with the roasted vegetables and parsley.

Paprika, Ljuti Reliš * Pepper spicy relish

Imamo prijatelja , koji jede strašno ljute stvari. Dok ostali odmah trče za čašu vode kad ovo probaju, on mirno vadi viljuškom , u slast jede i smeška se nama .



Sastojci


5 paprika babura, crvenih i žutih
3 čili papričice, zelena i rvene
3 čena belog luka
1 Kašika maslinovog čili ulja
1 kašičica voćnog sirupa ( ja sam koristila tamarilo)


Priprema

Paprike ispečemo u rerni, očistimo od kožice i iseckamo na režnjeve
Čili papričice iseckamo na kolutove, sve sa semenom

beli luk sitno iseckamo
Sve sjedinimo pa dodamo ulje i sirće
Ako ne volite baš ljuto , koristite obično maslinovo ulje i očistite čili papričice od semenki.

Pepper spicy relish


We have a friend that can eat hottest stuff. After we try the same, we make a run for glass of water. He keeps eating it and laughing at us. This relish made specialy for him



Ingredients

5 peppers, red and yellow
3 chillies, green and red
3 gloves of garlic
olive oil with chilli
tamarilo vinegar



Create

Roast peppers in teh oven. Peel and deceed, than cut in strips
Cut chilli peppers with seeds
Crushe cloves of garlic

Add all in the jar. Pour 1/2 tsp vinegar and decent amount of chilli oil.

Kolači od krompir pirea* Potato cakes

Ovo je divan prilog nekom jelu ali uz lepu salatu, lako može poslužiti i za ručak.

Sastojci

800 g krompira.
2 jaja
2 Kašike crvenog luka, sitno iseckanog
2 Kašike zelenog luka, sitno iseckanog
1 šolja šunke.isečene
so i sveže mleven biber
2 Kašike putera
1 Kašika mleka
4 Kašike prezli

Priprema

Prvo skuvamo krompir. Ja moj skuvam sa korom, pa ga oljuštim i izrendam.

 Crveni luk malo prodinstamo.
Zatim dodajemo sve isečeno povrće , jaja i ako je pregusto dodamo i mleko.Sipamo šunku, posolimo, pobiberimo pa sve zamesimo
U neku modlu , može i okrugla sipamo na dno malo prezli, pa mešavinu krompira, pa opet prezle. Malo rukom pritisnemo, pa uklonimo modlu.
Ponavljamo ovo dok ne utrošimo sav krompir
Na vrh sipamo opet malo prezli i poželji rendan parmezan

Pečemo na namašenom plehu sa pek papirom  10 do 15 minuta na 190 stepeni Celzija

Potato Cakes



This is very nice sisde dish, but with some green salad can be lunch too.

Ingredients 


  • 1 3/4 lbs (800g) potatoes, peeled and rinsed
  • 2 eggs
  • 2 tablespoons onion, finely chopped
  • Salt and fresh cracked pepper
  • 1 cup pancetta (or ham, bacon…), diced
  • 2 tablespoons butter
  • 1 tablespoon milk
  • 2 tablespoons green onions, chopped
  • 4 tablespoons breadcrumbs or Panko

Create

1. Cook potatoes in plenty of salted water until cooked through. Meanwhile gently fry onion until translucent and set aside.
2. In a large bowl, combine potatoes, eggs, pancetta, onions, butter and chives. Season with salt and pepper to taste. Adjust the texture with a bit of milk if necessary.
3. Preheat your oven to 400°F (190°C) and line a baking sheet with parchment paper.
4. On the baking sheet, using a ring  other other mold, sprinkle a layer of breadcrumbs, then scoop potato mixture to shape the cakes—about 1 1/2 inch thick. Press down slightly with the back of a spatula and finish with another thin layer of breadcrumbs. Remove the  mold and repeat the process.
5. Bake in the oven at 400°F (190°C) for 10 minutes, or until golden and serve warm.
Notes: You can add grated parmesan cheese on top of the potato cakes.

Pečeni Karfiol * Baked Cauliflower

Šta uraditi kad u frižideru nadjete komad povrća koji nije na vreme stigao da bude upotrebljen, kao ovaj karfiol. Pade mi odmah na pamet recept , koji sam više puta vidjala ali ga nisam pravila. Ceo karfiol  namazan divnim začinima i senfom i ispečen u rerni. Eto pogledajte i sami.
Služite ga gde god ste nameravali da kao prilog služite povrće.

Sastojci

1 Karfiol, oko 2 kg, očišćen od listova
3 Kašike Dizon senfa
2 Kašike maslinovog ulja
1 kašičica čili pahulja
11 kašičica sočo
1 kašičica bibera





Priprema

Umutimo senf sa uljem , so, biber i čili pahulje
Premađemo ceo karfiol i ostavimo da stoji , oko 10tak minuta da taj premaz prodre u karfiol

Pečemo na pek papiru na donjoj žici. Na 220 stepeni C oko 45 minuta. 
S vremena na vreme okrenemo tepsiju

Baked Cauliflower


What do you do when you discover whole Cauliflower of good size 2 , in your fridge, that has not made it quite in time to your table, but is still edible , except some parts which you can easily cut off.

Remembered seeing pictures of baked whole cauliflower in the oven and that is what I did here

You can serve it anywhere you planned to serve vegetables as side dish



Ingredients

I whole cauliflower (mine was ca. 2kg)
3 Tablespoons of Dijon mustard
1 tsp sea salt
1 tsp pepper
1 tsp Chilli flakes
3 Tablespoons olive oil




Create

Clean cauliflower of the black bits and leaves
Make paste out of oil, mustard,salt, pepper and chilli flakes
Rub cauliflower and let it stand for about 10 minutes ,that spices go through it
Bake on 220 Degrees C for ca. 45 minutes

Gyoza , Japanske knedle * Gyoza, Japanese dumplings

Nemojte da vas ime prepadne. Ove fine knedlice, punjene raznim filovima su zaista lake za napraviti a ukus je divan.
Za one koji ne mogu nabaviti gotovo testo sledi i recept kako ga sami možete napraviti.

Ja obično napravim više nego što pojedemo pa ostatak (nepržene ali filovane) zamrznem.

Sastojci


Fil

1 šolja kupusa izrezanog na tanke rezance
400 g svinjskog mlevenog mesa
2 čena luka
2 Kašike kineskog belog luka ili može se zameniti sa mladim zelenim lukom, sitno iseckano
1 parče djumbira , veličine palca, izrendano
1 Kašika ulja od susama
1 Kašika soja sosa
so i biber, po ukusu
30 komada testa



Sos

1/3 šolje Terijaki sosa
1 Kašika ulja od susama


Testo

1 1/2 šolja brašna
1/2 šolje vruće vode
Malo gustina , za posipanje radne površine


Priprema


Testo


Dodamo svinjsko meso. Sada rukom sve dobro izmešamo. Ostavimo pokriveno u frižideru da stoji oko 30 minuta.

 Na polovinu testa stavljamo  1 Kašiku fila . prethodno smo ivice testa premazali vodom. Preklopimo. pa krajeve zatvaramo u obliku harmonike.



Zagrejemo ulje dodamo malo susamovog ulja i vode oko 2 cm. Stavimo knedle u tiganj, poklopimo i na srednjoj temperaturi, krčkamo dok voda ne ispari.
Zatim izvadimo knedle , pa dobro zagrejemo tiganj i na malo ulja propržimo knedle 2 do 3 minuta i to samo sa jedne strane.


Služimo uz sos, salatu od kupusa ili naseckani mladi luk.

Testo, priprema


Stavimo brašno u činiju pa u sredinu, polako usipamo vodu . Mešamo rukom , dok dobijemo loptu testa, koju zatim ostavimo da odmori pola sata do sat vremena

Testo će biti srednje čvrsto ali ne lepljivo.
Izvadimo testo na radnu površinu , pa oklagijom izrolamo tanko 1 do 3 mm max.
Možemo većom čašom vaditi krugove.

Goyza , Japanese Dumplings



The name might be difficult, but every of these little jewels is worth the effort. It is made throughout Asia and can have different fillings. For the ones that can not find ready made dumpling sheets I included recipe to make it at home.


Ingredients

30 Gyoza wrappers
1 1/2 cup thinly sliced cabbage
Thumb piece of freshly grated ginger
2 cloves crushed garlic
Handfull of finely chopped Chinese chives
400 g pork mince
salt and pepper , to taste
1 Tablespoon sesame oil
1 Tablespoon Soy sauce





Create


  1. Place mince, cabbage, sesame oil, soy sauce, ginger and garlic in a bowl. Stir to combine. Place wrappers on work surface. Make dumplings: Spoon 1 heaped teaspoon mince mixture on 1 half of wrappers. Brush edges with cold water. Fold remaining wrapper halves over to enclose filling. Press edges together to seal.

  2. Heat half the vegetable oil in a large frypan over high heat. Remove from heat. Reduce heat to medium-high. Arrange half the dumplings in pan. Cook for 1 to 2 minutes or until bases are browned. Add 1/2 cup hot water. Cover with lid. Cook for 4 to 5 minutes, adding more water if necessary. Remove from heat. Uncover. Stand for 1 to 2 minutes or until dumplings come away from pan easily. Repeat with remaining oil and dumplings.

  3. Meanwhile, make dipping sauce Place teriyaki sauce and sesame oil in a bowl. Stir to combine. Serve dumplings with dipping sauce and onion.

Home made wrappers

Ingredients
  1. 1 1/2 cups all-purpose flour [190g]
  2. 1/2 cup hot water, just boiled [118ml]
  3. cornstarch for dusting


Create

  1. Place the flour in a mixing bowl and create a well in the center.
  2. Add the water slowly to the well while stirring to combine the flour and water gradually.
  3. Stir together until all the water is absorbed.
  4. With clean hands, gather the dough into a ball. Turn it on to a clean surface and knead for one minute. The dough should not stick; add a small amount of flour if necessary.
  5. Place the dough back into the bowl and cover with a plate or lid.
  6. Let the dough rest for 30 minutes to an hour.
  7. Divide the dough into managable pieces if you like. Dust the work surface with a little cornstarch if the dough sticks.
  8. Roll out the dough into a large flat piece, about 1-3 millimeters thick (1/32" to 1/16").
  9. Cut the dough into squares or use a cookie cutter or cup to cut out circles. The size is up to you but I like to make wrappers 3" to 4" wide.
  10. Remove the trim, knead it into a ball and place in the covered bowl for a few minutes. Then roll it out to create more wrappers.
  11. Dust the wrappers with cornstarch before stacking them up.
  12. Use right away or store in an airtight container in the fridge for up to 5 days.

Vitaminski tanjir * Vitamine platter

Za sebe mogu da kažem da bi važila ona : Od sveg mesa , najviše volim salatu. Toliko raznih ukusa i aroma , osvoji mi sva čula. Meni bi ovo mogao biti ručak ali većinom se služi kod nas uz glavno jelo. Kako je jedu kao prilog, više ostane meni.

Sastojci

Malo zelene salate
1/2 crvenog luka, isečenog na tanke listiće
4 manja paradajza , isečena na kolutove
1 avokado, isečen na kriške
1 krasravac, isečen na tanke kolutove
1/2 crvene babure isečene na kockice
100 g feta sira, isečeno na kockice
Devičansko maslinovo ulje, so, biber i balzamik vinegreta




Priprema

Isečemo sve povrće , pa slažemo red po red. Prelijemo maslinovim uljem i vinegretom idodamo so i biber.

When it comes to me, I could use the saying : From all meats I love salad the best. It just satisfies all my senses.
Here we serve it as side dish, which means little helpings for others and the rest for me!

Ingredients

Some green leaves
4 small tomatoes, sliced
1 avocado
1/2 red onion, thinly sliced
1 cucumber, thinly sliced
1/2 red pepper , sliced
100 g feta cheese in little cubes
Virgin olive oil, balsamic vinaigrette
salt and pepper, to taste



Create

Prepare , slice, cube wash your ingredients
Arrange layers as you like on your plate and sprinkle with generous amount of olive oil and some vinaigrette

Pržen ljubičasti prokelj, sa šunkom i slaninom * Baked purple brussels sprouts with prosciutto and speck

Prokelj moje dete voli a ovaj ljubičasti još i jako lepo izgleda.
Nama je najukusniji kad ga kratko skuvam pa ispečem sa slaninicom i malo dimljene šunke. 




Sastojci

600 g prokelja
1 crveni iseckan luk
100 g dimljene slaninice , kockice
50 g dimljene iseckane šunke



Priprema

Očistimo i kratko u slanoj vodi skuvamo prokelj ( oko 10 minuta)

U tiganju prodinstamo luk dodamo slaninu pa przimo nekoliko minuta.


Dodamo ocedjeni kuvan prokelj i dimljenu šunku.


Pržimo nekoliko minuta.
Dimljena šunka i slanina su već slani ali ipak probajte, pa ako treba dosolite.

Baked purple brussels sprouts with prosciutto and speck


My kid loves brussels sprouts. And if they look so pretty as these purple ones that is a bonus.
I like to bake them after short cooking . And add prosciutto and smoked speck


Ingredients

600 g brussels sprouts
1 red onion, diced
100 g speck, diced
50 g prosciutto, sliced in small pcs




Create

Cook brussels sprouts in salted water for about 10 minutes
Drain
Saute red onion and add speck for about 3 minutes till crisped up
Add brussels sprouts and prosciutto and saute for another  5 minutes
