Cream of Zucchini
dumplings with cheese
1kg courgettes
1 / 2 bundle of basil
salt, pepper, nutmeg
750ml vegetable stock
3 tablespoons sweet cream
2 tablespoons lemon juice
dumplings
70gr cottage cheese
40gr parmesan
30gr butter (soft)
4 tablespoons crumbs
4 egg yolks
salt, pepper, nutmeg
1 tablespoon oil
In a pot put the washed and cut zuccini, pour half the broth and cook it a little till soft.
Then add basil leaves and salt, add fresh ground pepper, a little nutmeg and pour the remaining broth .. cover and cook till the end.
Pour the soup in the blender and blend till fine.
Back to the stove, let it boil, reduce to the lowest volume of cooking, add the cream and gently lower the dumplings into the soup.
On such a low fire simmer until dumplings begin to float on the surface.
Lemon juice added at the end before serving.
* For the dumplings: cheese drained of liquid, and add all other ingredients and make balls.
From this mixture I got exactly 12 dumplings.
