Limun kolačići * Lemon cookies

Ovaj kolačić me oduševio. Tako je mek i sočan i dašak limuna u njemu kao i ukus kokosa u premazu je baš ukusan.



Sastojci

1 šolja šećera
1/4 šolje putera , na sobnoj temperaturi
1/4 šolje kokosovog ulja
Rendana korica 1 velikog limuna
Sok limuna
2 velika jaja
1 šolja mlaćenice*
2 šolje samodizajućeg brašna*
1/2 kašičice soli




* Ja koristim samodizajuće brašno, tj. brašno koje već sadrži sodu bikarbonu i prašak za pecivo. Vi možete dodati 1 kašičicu od oba , ako koristite obično brašno
* Nisam imala mlaćenicu pa sam u 1 šolju mleka dodala 1 Kašiku limunskog soka, ostavila malo d astoji i to je isto to.


Priprema

Predgrejemo rernu na 185 stepeni Celzija
U velikoj činiji umiksamo puter, šećer kokosovo ulje, dok je fino kremasto
Dodamo koricu i sok limuna,mleko sa limunom, jaja i dobro ujedinimo

Dodamo prosejano brašno i so i sve dobro ali ne predugo izmešamo


Pečemo  u mafinarniku, oko 20 minuta, dok lepo ne porumene



Premaz: 1 šolja šećera u prahu, 3 kašike kokosovog brašna, 2 Kašike soka od limuna, 1 Kašika hladne vode
Možete još na vrh malo izrendati koricu limuna

Lemon Cookies

I was very happy with this batch of cookies. Incredibly soft, moist and tasty. And with dash of lemon just right



Ingredients

1 cup sugar
14 cup unsalted butter , at room temperature
2 large eggs
1 cup buttermilk *
2 cups of selfriising flour, or if using all purpose flour add 1 tsp baking soda and 1 tsp baking powder
1 cup buttermilk, I did not have any and used 1 cup milk , mixed 1 TBSP lemon juice and let it sit for 10 minutes
1/4 cup good quality coconut oil
Zest and juice of one lemon
1/2 tsp salt



Create

Preheat the oven to 185 Degrees Celzius
In a large mixing bowl, cream, butter,coconut oil and sugar until fluffy
Add the zest and juice of lemon, eggs and buttermilk and beat until just combined
Add sifted flour and salt
Mix all together but do not overmix.

Scoop batter in the muffin tin and bake 20 minutes till golden brown

Icing: 1 cup icing sugar, 3 TBS coconut meal, 2 TBS lemon juice, 1 TBS cold water
Ice after cookis cool down
