Kineska supa sa zimskom lubenicom

U poslednjoj poseti pijaci, kupila sam neko egzotično povrće. Srećom imam ja drugarice kineskinje, pa se začas dobio recept za ovu preukusnu supu!

  1. Sastojci
    • 50 grama suvih račića
    • 200g sitno isečene zimske lubenice
    • 5 šolja bistre pileće supe
    • 1 (komad veličine palca ) svežeg iseckanog djumbira
    • 3 mlada luka, sitno isečena (oko pola šolje)
    • 1 Kašika susam ulja
    • 1 Kašika soja sosa
    • 2 Kašike sitno seckane crvene paprike
    • 1 šolja kuvanog pirinča
    • rukohvat iseckanog svežeg korijandera  ( i drške)
    • 3 Kašike Umami pasulja (soja)
    • 1 jaje
    • 200 g mlevenog mesa za ćuftice
    • 6 komada vodenog sitno iseckanog kestena

  2. Priprema

Stavimo u šerpu 2 šolje bistre supe  i pustimo da prokuva. Dodamo suve račiće i poklopimo. Sklonimo sa šporeta i ostavimo da stoji oko 15 minuta.


Vratimo na šporet pa krčkamo još 15 minuta
U medjuvremenu isečemo sitne listove zimske lubenice.
Dodamo ostatak bistre supe i zimsku lubenicu,umamu pasulj i  vodeni kesten, na niskoj temperaturi kuvamo još oko 20 minuta.


Pri kraju dodamo  čuftice od mlevenog mesa koje smo  napravili od susam i soja ulja, djumbir, seckane paprike, zelenoga luka, jednog jajeta i korijander


Serviramo na malo pirinča na dnu činije

    • Chinese broth with winter melon
    • On my last amrket visit I bought some unusual vegetables. Lucky I have Chinese friends , so the recipes are not far away. This is extremly tasty soup

    • Ingredients
        • 300 g winter melon thinly sliced
        • 2 TS  red pepper cut in fine cubes
        • 50g dried shrimp
        • 1 TS sesame oil
        • 1 TS soya sauce
        • 1 (2-inch) piece fresh ginger, peeled and cut into very thin matchsticks (2 tablespoons)
        • 3 scallions, thinly sliced (1/2 cup)
        • 1 cup boiled rice
        • 200 g mince meat for soup balls
        • 1 egg
        • 1/2 cup umamu beans
        • Small bunch of fresh coriander , finely sliced including stalks
        • 5 cups of clear broth (vegetable or chicken)
        • 6 pcs of sliced water chestnut
      1. Create
      1. Bring 2 cups broth to a boil in a 1-quart heavy saucepan, then add dried shrimp and remove from heat. Soak, covered, 15 minutes.
      2. Return shrimp mixture to low heat and simmer, uncovered, until shrimp is soft , about 15 minutes. Remove from heat and cool in cooking liquid
      3. Cut off and discard rind from winter melon. Remove and discard seeds, then cut melon into 1/3-inch cubes (about 3 cups). Add to broth with water chestnuts an umamu beans and gently simmer, uncovered, until melon is transparent, 20 to 30 minutes.  Stir in  mince red pepper, ginger, scallions, and soya and sesame oil , 1 egg and finely cut coriander

      1. Serve with little boiled rice on bottom of the bowl.
