Kolač rikota, bademi, limun*Almond , Lemon, Ricotta Cake



Ovaj divan kolač potiće iz Italije. Ja sam slaba na sve kolače sa brašnom od badema. Nikakvo drugo brašno nije potrebno.  Rikota u njemu sa limunom je posebna priča. Probajte i saznaćete o čemu govorim. Jož da ne pričam koliko je lako napraviti ga.



Sastojci

8 Kašika (120 g) neslanog mekog putera
3/4 šolje ( 200 g ) šećera
1kašićica ekstrakta vanile
1/4 šolje korice od limuna (oko 2 limuna)
sok od 1/2 limuna
4 jaja
2 1/2  /240 g) šolje brašna od badema
300 g rikote
malo badem listića za dekoraciju
Šećer u prahu za posipanje



Priprema

Priprema je vrlo jednostavna

Sve sastojke sipamo u činiju i mikserom dobro umiksamo.



Prespemo u okrugao pleh ,kome se vadi dno, a koji smo namastili. Možete staviti i pek papir na dno. Pospemo listićima badema ili izmrvljenim bademom



Pečemo oko 50 minuta


Kad se kolač potpuno ohladi pospemo šečerom u prahu. Možete ga služiti sa malo  jogurta sa strane

Almond, Ricotta, Lemon Cake



I do not think I made a cake so easy, ever before. No separate mixing of anything, just combining everything in a bowl and done. Recipe originates from Italy and one of my favorite recipes without flour.



Ingredients:
  • 8 Tbsp. (120g) unsalted butter, softened
  • 3/4 cup (200g) sugar
  • 1 vanilla bean, split and seeds scraped (or 1 tsp vanilla extract)
  • 1/4 cup lemon zest ( I used 2 large Meyer lemons)
  • lemon juice from 1/2 lemon
  • 4 eggs
  • 2 1/2 cups (240g) almond meal
  • 10 1/2 oz. (300g) ricotta
  • flaked almonds, for the top
  • confectioners' sugar, for dusting

Create



1. Preheat oven to 160°C/140°C fan forced. Grease and line base of a 20 cm round cake pan with baking paper.

2. Place ricotta, eggs, zest,,lemon juice, almond meal ,butter,vanilla and sugar in a large bowl. Using an electric mixer, beat until smooth. Pour into prepared pan. Sprinkle evenly with almonds. Bake for 55 minutes, or until cooked through.
Let it cool and dust with icing sugar. Serve with plain yoghurt on side
