Zeleni Kari
- 4 čili papričice,zelene
- 1 mali crni luk
- Komad djumbira veličine palca,očišćen i izrendan
- 1 zgnječen čen belog luka
- oko 80 g svežeg korijandera
- 1 limeta samo rendana korica
- 2 limete ,rendane i sok
- 2 komada limunske trave(glup prevod ali ne znam drugi,javite mi...(Lemongrass)
- 1 kašika semena korijandera
- 1 kašićica kima u prahu
- 1 kašičica crnog bibera u zrnu
- 1 kašika ribljeg ulja
- 3 kašike maslinovog ulja
Lemongrass
Green chili paste
- 4 hot green chillis, ends cut off
- 1 small onions, finely diced
- Thumb root ginger, peeled and grated
- 1garlic clove, crushed
- large bunch of fresh coriander (mine weighed 80g)
- 1 lime, zest only
- 2 limes, juice and zest
- 2 lemongrass stalks, finely chopped
- 1 tbsp coriander seeds
- 1 tsp ground cumin
- 1 tsp black peppercorns
- 1 tsp fish sauce
- 3 tsp olive oil
Sve ove sastojke lepo izblicamo u blenderu i dobijemo zelenu pastu
All the ingredients blend in food processor.
Tajlandski zeleni Kari
- 2 kašike zelenog karija
- 1kašika tamnog šećera
- nekoliko komada celera
- 750g pilećeg mesa ,ja sam koristila batake
- sok i rendana korica jedne limete
- 400 ml kokosovog mleka ili krema
- 2 tkašike ribljeg sosa li sosa od soje
- Rukohvat svežeg grubo sečenog korijandera (i drške!)
- 2 tbsp green paste (according to taste)
- 1 tbsp soft dark brown sugar
- 2-3 largestalsk of cellery
- 750g chicken, (use breast and/or leg meat)
- zest and juice of one lime
- 400ml/ coconut milk or cream
- 2 tbsp Thai fish sauce (or light soy sauce)
- handful of coriander, roughly chopped (the more the better though to be honest)
Priprema
1.Ispržimo pileće meso
2.U drugom tiganju,ja sam koristila wok na malo ulja propržimo zelenu pastu
3.Dodamo šečer,izmešamo
4, Dodamo isečen celer,sok i koricu limete,riblji sos, i mleko od kokosa.
5.Na niskoj temperaturi ostavimo da sve krčka ,nekoliko minuta.
6.Dodamo pileće meso i ostavimo još nekoliko minuta u sosu.
Method
1.First fry chicken meat bake green paste
2. In separate pan ,I used wok,on little oil
3. Add brown sugar,stir
4. Add celery pieces yest and juice of lime, Fish sauce and coconut milk or cream
5. Leave it to simmer couple of minutes
6. Put the chicken in the sauce ,well covered simmer for couple more minutes
Salata
Uz ovako ljuto jelo najbolje ide sveža salata
Za to nam je potrebno
pola glavice kupusa,tanko isečene kao za kupus salatu
1 crveni čili,bez semenki,iseckan
pola crvenog luka isečenog na tanke listove
6 komada rotkvice takodje iseckana na tanke listove
I komad mladog luka sitno iseckan
Rukohvat korijandera
so
1 kašika ulja od susama
2 kašike maslinovog ulja
sok od 1 limuna
Salad
half of green cabbage,finely sliced
1 red chili deseded and finely cut
1 green onion finely cut
1 half red onion cat in thin rings
1 handful of coriander
1 lime,juice from it
1 tsp of sesame oil
salt
6 pcs radish,finely sliced
handful of coriander
1.Prvo ieckammo sve povrće.Sipamo u činiju pospemo solju i masiramo ga malo grublje.Ovo će povrće omekšati.Posle desetak minuta,povrće,gnječeći rukama iscedimo
Začinimo sa sokom od limete,uljem od sesama.Pospemo seckanim korijanderom
1: Cut all the vegetables and put in a bowl.Sprinkle sea salt and massage roughly.After 10 minutes wring all the liquid out.Season with lime juice,sesame oil and garnish
Zeleni kari služimo uz pirinčane rezance i Roti(recept na mom blogu za puter pile)
Green curry served with rice noodles and Rotii.
