Bibimbap, mešani koreanski pirinač * Bibimbap , Korean Mixed rice bowl

Obožavam azijska jela, sve njihove začine i arome. Ovo  koreansko jelo sa zvučnim imenom Bibimbap je baš jednostavno za napraviti. Veoma je ljuto i zbog čili paste i KimChi.  KimČi je fermentirano povrće i mislim jedan od najboljih probiotika . Recept kod mene na blogu OVDE 


Tradicionalno Bibimbap se servira u zemljanoj posudi. Na dno se sipa malo susamovog ulja, pa pirinač, pa dinstano povrće ,rocito žumance na vrh i sveđe govedje meso. Zatim se stavi na šporet nekoliko minuta i sve se dobr izmeša. Ja sam ovde predstavila kućnu verziju.

Sastojci


1 kašičica ulja
2 čena belog luka , iseckanog
500 g govedjeg mesa
1 1/2 TBSP soja sosa
1 Kašika ulja od susama
2 Kašičice gochujang ( Koreanski čili sos) ili koji nadjete
1 12 kašičice palm čećera ili smedjeg šećera
1/2 kašićice čili pahuljica
1 kašičica pirinčanog sirćeta
1 Kašika vode
3 do 4 šolje kuvanog pirinča, toplog
3 do 4 Kašike Kimči
3 pršena jajeta, rovito žumance jajeta sa rovitim žumancem
2 zelena luka za garniš
1 šargarepa, iseckana juliene (na tanke štapiće)
1 manji krastavac isečen na što tanje kriške
100 g iseckanih pečurki, šiitake ili bukovača



Priprema
Prvo iseckamo sve povrće i vrlo tanko iseckamo  govedje meso, koje mora biti bez masnoće.


Govedje meso stavimo u činiju , začinimo sa dosta belog seckanog luka, dodamo susamovo i sojino ulje i pospemo zrncima susama, pa stavimo u frižider.
Šargarepu iseckamo juliene ( na tanke štapiće), pospemo soli i to stavimo u frižider
Krastavac isečemo na što tanje kolutove , dobro posolimo i sipamo vodu d aga pokrije i stavimo u frižider.
Mlasi zeleni luk iseckamo na sitne kolutove, sipamo vodu , posolimo i stavimo u frižider
Bukovaču isečemo na tanke kriške , začinimo sa malo susamovog ulja i stavimo u frižider.



Sve povrće se pred serviranje izdinsta ali veoma kratko 30 do 60 sekundi..
U velikom tiganju zagrejemo ulje.
Dodamo govedje meso. Pržimo na  visokoj temeperaturi nekoliko minuta.
Kad se ispržilo, sklonimo sa šporeta. Kako smo ga već začinili nije više potrebno.




Ispržimo jaja i skuvamo pirinač.
Služimo uz kimči i pospemo seckanim zelenim lukom

My love for Asian food is known and obvious in dishes I regularly post. Bibimbap is a very spicy Korean dish and I love Kimchi, which I make at home

Traditionally Bibimbap is served in earth bowl, where you first put a little bit of sesame oil add cooked rice , sauted vegetables and raw meat. Sometimes only raw egg yolk , sometimes baked egg . This is put on a stove for couple of minutes. Than add chilli sauce and mix well.
I made home version.

Ingredients
  • 1 tsp oil
  • 2 cloves garlic, minced
  • 1/2 lb of lean beef, sliced as thin as possible
  • 1.5 tbsp soy sauce
  • 2 tsp sesame oil
  • 2 tbsp gochujang (Korean red chili paste)
  • 1.5 tsp palm sugar (or brown sugar)
  • 1/2 tsp chili flakes (optional)
  • 1 tbsp water
  • 1 big carrot sliced julienne ( thin matchsticks)
  • 1 cucumber , thinly sliced
  • 100 g of sliced mushrooms , shiitake or oyster
  • 2 green onions, thinly sliced
  • 3-4 cups of cooked, warm rice
  • 3-4 heaping tbsp of kimchi
  • 23eggs, fried separately with yolks still runny
  • Chopped green onion, to garnish (optional)



Create
First prepare all your ingredients and put them seasoned in the fridge. Carrots salted, cucumbers with minced garlic and in water
Mushrooms sliced and seasoned salt and pepper and sprinkle of sesame oil



Slice the beef in very thin slices. Season with lots of minced garlic soy sauce and sesame oil. Let it stand in the fridge for about 30 minutes


In a large pan, heat oil over medium heat

All vegetables, ( each separately) needs sauteing for very short time, before serving 30 to 60 seconds, except green onion which is for garnish
 Fry the beef on high for 2 minutes
Prepare vegetables
Serve your bibimbap with steaming rice, piled up vegetables and meat, chili paste, kimchi with runny egg on top. Garnish with green onion.
