Domaći Ratluk * Homemade Turkish delight

Išli smo kod prijatelja na većeru, gde je domaćin poreklom iz Turske. Koja bolja prilika nego da odnesem nešto njemu poznato iz domovine. Osim ratluka pravila sam (prvi put) i Tulumbe , za koje objavljujem recept ovde. Iako sama to kažem mislim da mi je potpuno uspelo da ga iznenadim a i njegova porodica je uživala.

Sastojci

800g  šećera
120g gustina
1 Kašika soka od limuna
1 kašičica ekstrakta od badema
1 kašičica tartar krema
50 g ljuštenih iseckanih oraha

Za posipanje

160 g šećera u prahu
30 g gustina






Priprema

Stavimo 375 ml vode u šerpu. Dodamo sok od limuna i šećer i mešajući pustimo da provri.
Kad provri kuhinjskim termometrom merimo temperaturu tečnosti dok stigne do 115 stepeni C. Ako nemate termometar, onda kao ja odokativno. Znamo da voda ključa na 100 stepeni C znači za nekoliko minuta je dostigla otprilike tu temperaturu posle ključanja.
Isključimo ringlu




U drugoj šerpi dodamo 500 ml vode krem tartar i gustin i . mešamo da se ne bi zgrudvalo
Nastavimo da mešamo, dok ne dobijemo lepkastu smesu. Sklonimo sa šporeta
Dodajemo po malo šećernog sirupa u smesu gustina i mešamo, dok se sve dobro ne sjedini i sirup potrošimo.





Vratimo na šporet, pustimo da prokuva pa odmah smanjimo temperaturu na najnižu i pustimo da se krčka oko sat vremena. Redovno mešamo
Posle sat vremena smesa će imati lepu zlatnu boju. Dodamo ekstrakt badema. Dodamo seckani orah

U tepsiju 20cm x20 cm sipamo ovu smesu , poravnamo i pustimo da se potpuno ohladi. Na sobnoj temperaturi.
Samu tepsiju namastimo i stavimo i namašćen pek papir u nju, a sve pospemo sa šećerom u prahu. Sada pospemo i na ratluk šećer u prahu i izrućimo pažljivo na radnu površinu koju smo takodje posuli šećerom u prahu. Skinemo pek papir
Sečemo na male kocke, najlaksše ide sa onim okruglim sekačem za pizzu.







Čuvamo u kontejneru, koji smo dosta posuli šećerom u prahu. Dobro zatvorimo i ostavimo u špajz, ne u frižider

Da da tako lako

Postoji dosta varijacija na temu ratluk
Može se praviti sa orasima ili pistacijima
sa vanilom
sa cimetom 
vodom od pomorandže
sa limunom
sa ruđinom vodicom 
Ako dodate par kapi boje za kuvanje, izgledaće i lepše

Home made Turkish Delight

What better present can you bring to people that invite you for a visit. The man of the house we visited was from Turkey , so I decided to try my hand on few sweets, this one and tulumbe , fried dough similar to Churos but in sugar syrup. I will be posting Recipes for the other shortly,
I also made vanila cookies, for the Lady of the house that comes from Germany. I know traditionally it is Xmas cookie, but she appreciated very much, and burek with goats feta






Ingredients
  • 800 g (28 oz, 4 cups) sugar
  • 120 g (4½ oz, 1 cup) cornflour (cornstarch)
  • 1 tbsp lemon juice
  • 1 tbsp almond extract
  • 1 tsp cream of tartar
  • Chopped walnuts
For the dusting
  • 160 g (5½ oz, 1 cup) icing sugar (confectioner’s sugar)
  • 30 g (1 oz, ¼ cup) cornflour (cornstarch)
  • Extra icing sugar


Create

  1. Place 375 ml (12½ fl oz, 1½ cups) water in a pan. Add in the lemon juice and sugar. Bring to the boil while stirring.
  2. Once the mixture comes to the boil keep stirring until the temperature reaches 115°C (240°F) on a candy thermometer. This is also known as the soft-ball stage.
  3. Turn the heat off from the sugar mixture. In a separate pan add 500 ml (17 fl oz, 2 cups) of water. Add in the cream of tartar and the cornflour. Whisk to remove lumps.
  4. Continue whisking while you bring the cornflour water to the boil. Once it becomes a gluey paste remove from the heat.
  5. Add a small amount of the the sugar syrup to the gluey paste and whisk to incorporate. Continue adding the syrup a bit at a time, whisking between each addition.
  6. Bring the mixture to the boil. Turn the heat down and allow to simmer very gently for about an hour. Stir frequently
  1. By now the mixture should be an amber colour. Add in  almond extract and chopped walnuts.Mix well

  1. Take a 20cmx20cm (8″x8″) baking tin, oil lightly, line with baking paper and lightly oil the baking paper. Pour in the Turkish Delight, cover and leave for several hours to cool completely.
  2. Dust the Turkish Delight with icing sugar and turn it out onto a surface dusted liberally with icing sugar. Remove the baking paper.
  3. Cut the slab of Turkish Delight into squares using a pizza cutter or a lightly-oiled knife.
  4. Sift the icing sugar and cornflour into a large bowl and add the squares of Turkish Delight. Mix well.
  5. Storage: Store the Turkish Delight in a sealed box together with all the icing sugar/cornflour mixture. Do not store in the ‘fridge
  6. Tips
There are many flavours/colours you can try with Turkish Delight:

Rosewater and pink/red (Get Rosewater from Asian or Middle-Eastern stores).
Orange Water and orange (get Orange Water from Middle-Eastern stores).
Lemon and yellow (Use a few drops of lemon flavouring).
Add pistachios or crushed walnuts to the mixture and colour it green.
Add in chopped dates or cinnamon and leave it a natural colour.
