Kokoda, Samoanska salata od sveže ribe * Kokoda , Samoan fresh fish salad

 Več sam mnogo puta pisala, da na Novom Zelandu živi 78 različitih nacija, pa je sasvim uobičajeno da svako donese neđto iz svoje zemlje po pitanju kulinarstva i nije baš lako sve to isprobati.Ima nekih jela koja vam se dopadnu više od ostalih , pa ih i napravite. Kad kod nas stigne sveža riba kao juče iz onoga što smo ulovli pravimo svakojake djakonije pa tako i ovu Kokodu, Specijalitet iz Samoe , koja se pravi od sveže ribe. Riba se samo marinira u soku od limete ili limuna oko 30 minuta i onda se dodaju svi ostali sastojci. Na oko vrlo jednostavan recept..kad se znaju sastojci. A ukus je zaista fantastičan. Riba snapper koju smo mi koristili je belog mesa i jedna od najboljih vrsta koje ovde imamo.




Sastojci

500 g bele ribe, isečene na komade oko 2 cm.
2 limuna ili limete , sok
1 crvena paprika babura
1 avokado
1 mango
1 mladi zeleni luk
1 čili papričica, opcionalno
so i biber , po ukusu
1/2 pola šolje kokosovog mleka



Priprema

Na isečenu ribu koja je u činiji (ne metalnoj) , sipamo sok od limete ili limuna i poklopljenu činiju ostavimo u frižideru oko 30 do 45 minuta- Kiselina će skuvati ribu.

U medjuvremenu pripremimo ostale sastojke, Isečemo mango na kocke , pa i avokado
Usitnimo crveni luk i iseckamo zeleni. Papriku takodje iseckamo na sitne kocke. Na sve to sipamo kokosovo mleko i promešamo. Dodamo u činiju sa ribom

Služimo hladno kao predjelo.

Kokoda, Samoan Fresh Salad

I wrote a few times that in New Zealand we have over 78 different nationalities  and it is only natural that all of them bring their own ideas in the kitchen, from their home country. It would be really hard to try and remember all of those , but from the once I tried, I do have my favorites which I prepare at home. This salad is amazing, nothing complicated. It all comes to the good quality of fresh fish, right kind of fleshy white fish and of course combination of ingredients.
I mostly make it with excitment when we catch fresh fish like recently. Fish used in this recipe is Snapper one of teh best fishes that swim in our ocean.

Ingredients
500 gFish, very fresh white fish e.g. trevally, bluenose, tarakihi, snapper
½ cupFresh lime juice, freshly squeezed or lemon juice
½ cupCoconut cream
½Red onion, finely diced
1Red chilli, large, finely diced, optional
2Spring onions, finely sliced
1Red capsicum, finely diced



Create

  1. Cut fish into small 1-2cm pieces. Combine with lime or lemon juice in a non-metal, non-corrosive bowl. 
  2. Cover and set aside to marinate for 30-45 minutes in the fridge - the acid of the citrus will cook the fish.
  3. Mix in coconut cream, onion, chilli (if using), spring onions, capsicum and tomatoes. 
  4. Season to taste with salt and freshly ground black pepper. 
  5. Serve chilled in small bowls or in lettuce leaf cups.
